Herring in Wine Broth

Ingredients
- 6 fresh herring (ready-to-cook)
- 1 shallot (thinly sliced)
- 1 carrot (thinly sliced)
- 2 stalks celery (thinly sliced)
- 1 tbsp parsley (finely chopped)
- 1 tsp peppercorns
- 1 bay leaf
- Salt
- Pepper
- 3 tbsp Lemon juice
- 1 lemon
- 250 ml dry white wine
- 250 ml Water
- 1 tbsp butter
- parsley for garnish
Instructions

Season herring with salt, pepper and 1 tbsp lemon juice.

Sauté vegetables and bay leaf in hot butter, deglaze with wine and water, add 2 tbsp lemon juice and peppercorns, cover and simmer about 20 minutes, lightly season and stir in parsley.

Place herring into the pot and let cook for about 6 minutes, do not boil further.

Remove herring and serve with vegetables and some broth.

Serve with lemon wedges.
