Cucumber Boats with Mushrooms and Ham

Ingredients

  • 2 cucumbers
  • 100 g mushrooms
  • 1 red bell pepper
  • 1 Garlic clove
  • 100 g turkey ham
  • 50 g pitted black olives
  • 75 g mozzarella
  • Salt
  • Pepper
  • 50 g walnut kernels
  • 4 sprigs Parsley

Instructions

    Peel the cucumbers, cut them lengthwise in half and remove the seeds. Clean the mushrooms and slice them.

    Wash, trim, and dice the bell pepper. Peel and finely chop the garlic. Cut the ham into strips. Chop the olives and cube the mozzarella.

    Mix the mushrooms with the bell pepper, garlic, ham, olives, and mozzarella. Season with salt and pepper and fill the cucumber halves.

    Place the cucumbers in a baking dish filled with a little water and bake in a preheated oven at 225 °C (fan‑forced 200 °C; gas: level 3–4) for about 20 minutes.

    Meanwhile, chop the walnuts. Wash, dry shake, and chop the parsley. Sprinkle the cucumber boats with it before serving.
