- 2 tbsp lemon juice
- 2 onions
- 4 apples
- 1 bunch parsley
- Salt
- Pepper
- 4 tbsp butter
- butter (for the foil)

Preheat the grill in the oven to its highest setting. Debone, wash and pat dry the herings. Brush 8 sheets of foil with butter, place the herings on them, unfold, and drizzle with lemon juice. Peel the onions and cut into rings. Wash, dry, quarter the apples, remove cores, and slice thinly.

Season the herings with salt and pepper and lay onion rings and apple slices on one side of each fish. Rinse parsley, shake dry, finely chop and sprinkle over. Distribute butter in small flakes on top. Fold the herings together and use the foil to form a packet. Grill from each side for about 5 minutes and serve two herings per portion.
