Ingredients
- 2 cucumbers
- 1 Red Onion
- 60 g walnut kernels
- 1 Pomegranate
- 1 lemon (juice)
- 1 tsp Honey
- 4 tbsp apple cider vinegar
- 8 tbsp olive oil
- Salt
- pepper (ground)
- 4 herrings about 140 g each (ready-to-eat, headless)
Instructions

Peel the cucumbers, quarter lengthwise and slice. Peel the onion, quarter it and cut into thin strips. Roughly chop the walnuts. Halve the pomegranate and remove the seeds. Rinse the parsley, shake dry and pluck the leaves. Whisk together lemon juice, honey, vinegar and 6 tbsp oil; season with salt and pepper.

Rinse the herrings, pat dry, season with salt and pepper, and cook in the remaining oil in a non-stick pan over low heat for about 5 minutes on each side.

Combine all salad ingredients with the dressing and divide into bowls. Place one herring on top of each bowl and serve immediately.
