Ingredients

  • 60 ml white balsamic vinegar
  • 1 tsp dark balsamic vinegar
  • Salt
  • a pinch of sugar
  • 150 ml grape seed oil
  • 2 sprigs thyme
  • 2 sprigs marjoram
  • 1 tsp Pink peppercorns

Instructions

    Whisk both balsamic vinegars with 2–3 tbsp water, a pinch of salt and sugar until dissolved. While continuing to stir, gradually add the oil to form an emulsion.

    Toss the herbs into the vinaigrette with the peppercorns. Taste again and serve.
