Herb Stew with Beef

Ingredients

  • 200 g dried red beans
  • Salt
  • 500 g beef (from the shank)
  • black pepper
  • 140 g onions
  • 6 tbsp oil
  • 2 tsp ground Turmeric
  • 1 tbsp Tomato Paste
  • 1 bay leaf
  • 5 dried limes (or zest and juice of a fresh lime)
  • 3 bunch smooth parsley
  • 3 bunch chives
  • 15 g dried fenugreek

Instructions

    Soak beans overnight in lukewarm water. The next day drain them in a sieve. Cook in plenty salted water for 1 hour, 30 minutes until tender. Drain.

    Cut beef into 3-4 cm cubes, season with salt and pepper. Peel and finely dice onions. Heat 3 tbsp oil in a pot. Brown the meat all sides. Add onions and turmeric, cook 1 minute. Stir in tomato paste, bay leaf, dried limes and pour in 500 ml water. Season again. Simmer on low heat for 45 minutes.

    Meanwhile finely chop parsley and chives. After 45 minutes add another 500 ml water and simmer for an additional 30 minutes.

    Heat remaining oil in a pan. Set aside 1 tbsp of the herbs. Sauté the rest of the oil for 1 minute, add fenugreek. Then add the herb mixture and beans to the meat, cook for another 10 minutes. Season with salt and pepper. Sprinkle the remaining herbs over the stew before serving.
