Bratwurst with Beans

A hearty dinner featuring fresh beans and savory bratwurst, perfect for a comforting meal.

Ingredients

  • 400 g dried small white bean kernels
  • 1 large onion
  • 1 Garlic clove
  • 4 tbsp olive oil
  • 1 tbsp Tomato Paste
  • 1 tbsp fresh chopped herbs (sage and thyme)
  • 400 g diced tomatoes (canned)
  • 300 ml tomato juice
  • Salt
  • pepper (ground)
  • 4 bratwurst sausages (or 4 large salsiccia)
  • 2 tbsp Vegetable oil
  • a handful arugula

Instructions

    Place the beans in a pot, cover with about 1.5 liters of cold water and soak overnight. The next day bring the beans to a boil in the soaking water, then simmer covered over low heat for about 90 minutes until nearly tender. Drain into a colander and rinse with water.

    Peel the onion and garlic, then sauté in a pot with 2 tbsp olive oil until translucent. Stir in tomato paste and fresh herbs, cook briefly, then add diced tomatoes, tomato juice, and drained beans. Season with salt and pepper, simmer for another 15 minutes until the bean mixture thickens; add more tomato juice if needed.

    Brown the bratwurst sausages or salsiccia in a hot pan with oil, turning frequently, for 8-10 minutes until crisp and golden brown.

    Serve the sausages alongside the bean mixture on plates. Garnish with a few arugula stems and drizzle with remaining olive oil.
