Overall, the proportion should be about 3:1 salt to the remaining ingredients.

Depending on taste and preferences, the amounts of herbs can vary. In general, use decreasing quantities from rosemary to lemon zest (total 100 g).

Remove stems or stalks from the herbs. Grind spices, mustard seeds, and sesame in a mortar; combine with salt and herbs in a food processor. Immediately store the herb salt in airtight jars and keep it dark.
