Ingredients
- 50 g herbs (e.g., thyme, oregano, rosemary)
- 100 g coarse sea salt
- 1 red chili pepper
- 1 tsp organic lemon zest

Rinse the herbs, pat dry with paper towels, remove leaves or needles. Chop finely and crush in a mortar with about half of the salt until fine. Wash the chili, trim stem end, slice lengthwise and remove seeds. Finely chop the flesh and add to the spice mix. Add remaining salt and lemon zest, then transfer into a screw-top jar.
