Ingredients
- 250 g boiled sausage (Regensburg, Lyoner... )
- 250 g thin smoked blood sausage
- 0.5 bunch radishes
- 2 pickled cucumbers
- 2 tbsp pickle brine
- 0.5 bunch spring onions
- 1 sour apple
- 4 tbsp mild white wine vinegar
- 1 tsp sharp mustard
- 6 tbsp neutral-flavor vegetable oil
- Salt
- pepper (ground)
- 2 tbsp chives sprigs

Remove the skin from the sausages and slice them thinly. Wash, trim, and quarter the radishes. Drain the cucumbers and cut into thin slices. Quarter the apple, remove seeds, and dice small pieces. Trim spring onions, cut ends off, and slice into fine rings. Mix all ingredients in a bowl.

Whisk vinegar, oil, pickle brine, mustard, salt, and pepper to make a dressing; combine with salad ingredients and cover for about 45 minutes. Sprinkle with chives before serving.
