Ingredients
- 2 tbsp light balsamic vinegar
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- 6 cm cucumber
- 1 tbsp freshly chopped parsley
- 2 tsp freshly chopped tarragon
- 2 tsp freshly chopped chervil
- 2 tsp freshly chopped chives
- 2 tsp freshly chopped mint

In a small bowl whisk the vinegar with salt and pepper until the salt has dissolved. Stir in the oil. Peel the cucumber, cut it lengthwise in half, remove the seeds, dice the flesh into small cubes and mix with the herbs and vinaigrette; season to taste. Serve herb relish with raw vegetable sticks, grilled or steamed vegetables.
