Fondue with Spare Ribs

Ingredients
- 1.25 kg pork rib (cut into portions by butcher)
- 2 Garlic cloves
- 6 tbsp barbecue sauce (from jar)
- 1 tsp dried marjoram
- 2 tsp sambal oelek
- 1 head lettuce
- 4 tbsp mustard (from jar)
- 8 tbsp remoulade (from jar)
- 200 g mixed pickles
- 4 tbsp stuffed olives (e.g., with almonds)
- 4 tbsp pearl onions
- 2 bunches chives (about 30 g each)
- fat for frying

Wash and pat dry the pork ribs. Peel and finely chop the garlic, mix it with barbecue sauce, marjoram, and sambal oelek; brush the mixture all over the ribs and cover in a bowl, refrigerate for 2 hours. Clean the lettuce, separate into leaves, rinse and dry.

In each fondue pot place some mustard, remoulade, mixed pickles, stuffed olives, pearl onions, sliced chives, and arrange the spare ribs on lettuce leaves. Heat the fat in a fondue pot over a burner; skewer one rib at a time and fry it in the hot fat at the table. Enjoy with a dip of your choice.
