Ingredients

  • 50 g sunflower seeds
  • 50 g Pine nuts
  • 150 g wild garlic
  • 50 g nettle tips
  • 3 tbsp crème fraîche
  • 100 ml olive oil
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper

Instructions

    Roast the sunflower seeds and pine nuts in a dry pan until fragrant, then remove.

    Wash and shake off excess water from the wild garlic and nettles. Roughly chop both and place them in a blender. Add the seeds with the crème fraîche and blend. Slowly pour in the olive oil while continuing to blend until a creamy paste forms. Stir in the lemon juice and season with salt and pepper.
