Ingredients

  • 600 g honey
  • 1 tbsp thyme leaves
  • 500 g hazelnuts

Instructions

    Pour the honey into a pot and simmer over low heat for 2-3 minutes. Add the hazelnuts and thyme, then continue to simmer for another 20-25 minutes. After cooking, drop a splash of hot honey into a glass of ice‑cold water; if it hardens immediately, the crunch is ready.

    Line a 22 x 24 cm baking sheet with parchment paper. Spread the hazelnut crunch onto the sheet, smooth it out, let it cool, lift it off the parchment, cut into cubes, and serve in paper molds.
