Ingredients
- 12 eggs
- Salt
- Pepper (freshly ground)
- ½ handful parsley
- 1 handful chervil
- 1 handful coriander leaves
- 4 thin slices cooked ham
- olive oil (for frying)
- fresh chervil (for garnish)
Instructions

Whisk the eggs, season with salt and pepper. Wash the herbs, shake dry, finely chop the leaves and mix into the eggs. Heat a little olive oil in a non‑stick pan and pour the egg mixture to form four thin omelettes, cooking each side for about 2 minutes. Drain on kitchen paper.

Place one slice of cooked ham on each omelette and roll over the ham. Cut into ~2 cm sections for serving and garnish with fresh chervil.
