Ingredients
- 2 sardine fillets
- 1 tbsp capers
- 150 g green olives (pitted)
- 1 dried peperoncino
- 2 tbsp cognac
- 1 Garlic clove
- 1 tsp Honey
- 2 tbsp olive oil
- 1 tbsp freshly chopped oregano
- 2 tbsp freshly chopped parsley
- Salt
- Pepper (freshly ground)
- a splash lemon juice
Instructions

Pat the sardine fillets dry. Combine with capers, olives, peperoncino, cognac and peeled garlic in a blender. Add honey and blend into a fine paste, slowly incorporating olive oil until a spreadable cream forms. Mix in herbs and season with salt, pepper and lemon juice.

Transfer green tapenade to a bowl and serve with fresh baguette.

Repeat the same process for black tapenade, using black olives instead of green.
