Herb Meat Salad

A legendary breakfast and evening snack classic. Yogurt light presents the meat salad as very low in calories.

Ingredients

  • 70 g small pickles (3 small pickles)
  • 1 Spring onion
  • 100 g yogurt (1.5% fat)
  • 2 tbsp salad cream
  • 1 tsp Mustard
  • Salt
  • Pepper
  • 1 bunch chives
  • 0.5 bunch flat-leaf parsley
  • 200 g reduced-fat meat sausage (e.g., poultry sausage)
  • 90 g whole-grain rye bread (2 slices)
  • lettuce leaves or cucumber for garnish (optional)

Instructions

    Slice pickles into fine strips. Trim, wash and slice spring onion into thin rings.

    Whisk yogurt, salad cream, mustard, a pinch of salt and pepper together. Fold in spring onion rings and pickle strips.

    Wash chives and parsley, dry by shaking. Cut chives into fine rolls. Pick off parsley leaves and finely chop. Stir herbs into the sauce.

    Remove sausage skin. Slice meat sausage into thin strips. Mix sausage with sauce. Season with salt and pepper. Let salad rest for 10 minutes before serving.

    Serve on bread slices topped with lettuce or fresh cucumber if desired.
