Ingredients

  • 7 hard boiled eggs
  • 2 sprigs thyme
  • 1 tbsp ground walnuts
  • 100 g butter
  • 1 tbsp mustard
  • Salt
  • pepper (ground)
  • 8 bread slices (any kind)
  • 4 walnut halves
  • 1 stalk curry leaf
  • 1 pinch turmeric
  • curry leaf for garnish

Instructions

  1. 1.

    Peel the eggs, finely chop and halve them. Rinse the thyme, strip the leaves and finely chop as well. Stir the ground walnuts, half of the butter and half of the mustard into one half of the egg mixture and season with salt and pepper.

    Spread on bread slices and garnish each with a walnut half and a thyme sprig.

    Rinse the curry leaf, shake dry and finely chop. Mix the turmeric, remaining butter and mustard into the other half of the egg mixture and season to taste.

    Also spread on bread slices and serve garnished with curry leaf.
