Fruity Chicken Salad
A fruity and spicy flavor experience: The Fruity Chicken Salad from Spoonsparrow tastes great and scores high with muscle-strengthening protein.
Ingredients
- 3 chicken breast fillets
- 2 tbsp Vegetable oil
- 2 Celery stalks
- 2 small red apples
- 1 Granny Smith apple
- 1 tsp lemon juice
- 1 small can of mandarin
- 1 tbsp Raisins
- 1 bunch parsley
- 150 g mayonnaise
- Salt
- Pepper
- Salad leaves (for garnish)
Instructions

Wash the chicken, pat dry, season with salt. Pepper and sear in hot oil for 6 minutes on all sides, let cool, then cut into pieces.

Wash the apples, dry, core, dice, and drizzle with lemon juice.

Drain the mandarin can, reserve 1 tbsp of the liquid.

Clean and slice the celery into ribbons.

Soak raisins in the reserved mandarin liquid for 5 minutes.

Wash parsley and finely chop it.

Combine all ingredients in a bowl, season with salt and pepper, mix in mayonnaise, and let rest for 30 minutes. Before serving, stir in parsley.

Arrange salad leaves on plates, top with chicken salad, and serve the fruity chicken salad.
