Ingredients
- 1 onion
- 2 tbsp butter
- 1 tbsp black peppercorns
- 2 tbsp flour
- 200 ml meat broth
- 100 ml whipping cream (30%)
- 2 tbsp green peppercorns (in jar)
- Salt
- 20 ml cognac
- 1 tbsp Crème fraîche
- pepper (ground in mill)
Instructions

Peel the onion, finely dice it and sauté until translucent in hot butter. Briefly cook the crushed peppercorns with it, then dust with flour and stir in the meat broth.

Add the cream and simmer gently for about 10 minutes, stirring occasionally. Finally stir in the green peppercorns and season with salt and cognac. Garnish with a dollop of crème fraîche and sprinkle freshly ground pepper before serving.
