Herb Cheese Tartlets

Ingredients
- 300 g wheat semolina
- 30 g flour (Type 405)
- Salt
- 75 g soft butter
- 200 ml water
- small sage
- small thyme
- small parsley
- 2 Eggs (size M)
- 300 g ricotta
- black pepper freshly ground

Mix semolina, flour and salt in a bowl. Add butter and gradually pour in enough water to form a smooth, elastic dough. Knead vigorously in a stand mixer or with hand‑mixing attachments. Shape into a roll with floured hands and divide into 3 portions. Pull herb leaves from stems. Roll each portion thinly on lightly floured surface. Distribute herbs over one third of the dough, fold the second third over it and roll again.

Separate eggs. Beat yolk with 1 tbsp water. Mix remaining egg whites with ricotta, salt and pepper. Drop small dollops of ricotta mixture onto the herb dough. Brush gaps with yolk. Place the third dough layer on top. Press edges together firmly and cut out round shapes with a cookie cutter or glass.

Place tartlets on a parchment‑lined baking sheet. Bake at 200 °C (gas stove: level 3) for 10–15 minutes until golden brown.
