Herb Cheese Spätzle

- 500 g flour
- 100 g nettle leaves
- 3 bunches parsley
- 5 eggs
- 2 egg yolks
- 400 g onions
- 70 g butter
- 300 g Emmental cheese
- Salt

Wash herbs, finely chop and mix with flour, eggs, salt and one egg yolk into a dough that should flow thickly from a cooking spoon. If the dough is too firm, add another egg yolk. Cover and let rise for 30 minutes. Peel onions and slice into thin rings.

Dice cheese. Melt butter and sauté onions over low heat until golden yellow while stirring. Bring plenty of salted water to boil. Press portions of dough through a spätzle press into the bubbling saltwater.

Remove with a slotted spoon as soon as they rise to the surface. Place in a bowl, then layer with cheese cubes, followed by hot spätzle. Before serving top with onion rings.
