Allgäuer Käsespätzle

- 400 g flour
- 4 eggs
- 1 tsp salt
- 4 onions
- 50 g butter
- 200 g Emmental cheese
- Salt
- Pepper
- 0.5 bunch chives (cut into rings)

Whisk together the flour, eggs, salt and about 3 tablespoons of water with a hand mixer (kneading attachment) to make a dough that is relatively liquid but quite thick. Let the dough rest for about 15 minutes.

Meanwhile grate the Emmental cheese finely. Peel the onions, cut them lengthwise in half and then slice crosswise into thin strips. Roast the strips in butter until they are golden yellow, season with salt and pepper, and keep warm.

Place a spätzle scraper on the edge of a large pot and fill it with a portion of dough. Move the scraper slowly and evenly back and forth so that the spätzle fall into the boiling salted water (there should be at least 5 cm between the scraper and the water surface). After two to three minutes the spätzle are done; remove them and drain. Repeat until all spätzle are cooked. Transfer the finished spätzle to a preheated bowl, mix in the chive rings, then add the grated Emmental cheese, season again with pepper and salt, and finally distribute the onions over the spätzle. If strands pull when lifting the spätzle from the bowl, they are just right. If needed, place them for a few minutes in a warm oven so the cheese can melt.
