Gratinated Pumpkin Spätzle

Ingredients
- 600 g pumpkin
- 100 ml broth
- Salt
- black pepper (freshly ground)
- nutmeg
- 450 g wheat flour type 550
- 2 Eggs
- 2 onions
- 20 g butter
- 200 g grated Emmental cheese
- 50 g diced Camembert
- 2 tbsp browned butter
- 1 tbsp chives sprigs

Peel, seed and dice the pumpkin. Cover with broth in a pot over medium heat and steam for about 15 minutes until tender. Strain the broth through a sieve into another pot; puree the cooked pumpkin, season with salt, pepper and nutmeg, then let cool. Mix the pumpkin mixture with flour and eggs to form a smooth dough; cover and rest for 15 minutes.

Peel and slice onions into strips. Melt butter in a pan and brown the onions over gentle heat. Bring salted water to a boil. Spread portions of the spätzle dough onto a damp wooden board and cut into thin strips or press through a spätzle maker into the boiling water. Cook each batch for 3–4 minutes until they rise to the surface.

Lift the spätzle with a slotted spoon and layer them in a baking dish, alternating with both cheeses.

Sprinkle the top with more cheese and bake uncovered for 10 minutes. Serve on plates, drizzle with browned butter, scatter onions over the top, and garnish with chives sprigs.
