Ingredients

  • 100 g Arugula
  • 100 g mixed wild herbs (e.g., dandelion, borage, purslane, nettle)
  • 1 handful fennel fronds
  • 8 small elderflower buds
  • 6 spears green asparagus
  • 1 Garlic clove
  • 1 Shallot
  • 2 tbsp lemon juice
  • 2 tbsp white balsamic vinegar
  • 1 tsp Honey
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • chive blossoms (for garnish)

Instructions

    Rinse and dry the arugula and wild herbs, trim as needed. Gently wash the fennel fronds and elderflower buds, pat dry, and remove tough stems. Peel the lower third of the asparagus and cut into thin strips or shave. Arrange all prepared salad ingredients decoratively on plates.

    Peel and finely chop the garlic and shallot. Mix both with lemon juice, balsamic vinegar, honey, olive oil, salt, and pepper; taste and adjust seasoning. Drizzle over the salad and serve garnished with chive blossoms.
