Ingredients

  • 500 g green beans (green beans)
  • 500 g butter beans
  • 100 g pancetta (sliced, or bacon as substitute)
  • 2 Garlic cloves
  • 4 slices white bread
  • Olive oil (extra virgin)
  • Salt
  • freshly ground pepper

Instructions

    Wash and trim the beans, then blanch in boiling salted water for 10-12 minutes. Drain well. Crumble the bread. Peel and finely chop the garlic. Slice the pancetta into thin strips. Heat 4 tbsp oil in a large pan and brown the croutons until golden. Add the garlic and pancetta and sauté briefly. Season with salt and pepper.

    Add the beans to the pan and stir. Toss over high heat for 1-2 minutes. Adjust seasoning with salt and pepper, then transfer to a serving plate and serve hot.
