Herb and Caper Mayonnaise

Ingredients
- 1 vegetable onion
- 1 tbsp plant oil
- 3 anchovy fillets
- 1 tbsp capers (jar)
- 250 g butter
- 125 ml dry white wine
- 1 tbsp White Wine Vinegar
- 3 egg yolks
- Salt
- white pepper (ground)
- 1 tbsp freshly chopped parsley
- Worcestershire sauce (optional)

Peel the onion, finely chop it and sauté in a pan with hot oil until translucent. Remove from heat and let cool. Drain the anchovy fillets and capers well and finely chop them.

Melt the butter and skim off the foam. Add the wine and vinegar to a pot and reduce by about two-thirds. Let cool and pour into a metal bowl with the egg yolks. Whisk over a hot water bath until creamy. Remove from heat, add the butter first in drops, then in a thin stream while constantly stirring until a smooth sauce forms. The egg mixture must not curdle.

Fold the sautéed onion cubes, anchovy fillets, capers and parsley into the sauce and season with Worcestershire sauce, salt and pepper. Serve in small bowls.
