Ingredients

  • Bell peppers (one each of red, yellow, green)
  • 2 onions
  • 1 Garlic clove
  • 4 tomatoes
  • 200 g salami (thin slices)
  • 100 ml Vegetable broth
  • 6 tbsp oil
  • Cayenne pepper
  • Salt
  • Pepper
  • 4 tbsp chives ribbons

Instructions

    Wash, trim and halve the bell peppers, remove seeds and white membranes, then slice into strips. Peel and cut onions into rings. Peel garlic and finely chop. Wash tomatoes, remove stems and cut into wedges. Slice salami into ~1 cm wide strips. Mix peppers, tomatoes, garlic and salami; sprinkle onion rings over the mixture and gently fold in.

    For the dressing, bring broth to a boil, add oil and remaining seasonings, then pour evenly over the salad. Let it rest for at least 2 hours. Just before serving, stir well and adjust seasoning.
