Hearty Meatballs

Ingredients
- 1 handful parsley
- 1 onion
- 2 Garlic cloves
- 5 tbsp olive oil
- 200 g chorizo
- 300 g mixed ground beef
- 1 tsp Sweet paprika powder
- 1 pinch chili flakes
- Salt
- Pepper
- 1 tbsp breadcrumbs
- 400 g diced tomatoes (canned)
- 100 g white beans (canned)

Rinse the parsley and finely chop. Peel the onion and garlic cloves, then finely chop both. Sauté in 1 tbsp oil, then remove from heat. Remove skin from chorizo and dice small. Mix ground beef with chorizo, half of the onion mixture, paprika powder, chili flakes, salt, pepper, and half of the parsley. If needed, fold in breadcrumbs until a firm meat dough forms. Shape into small balls and fry in remaining oil for about 10 minutes on all sides.

Let canned tomatoes simmer gently with the remaining onion mixture and drained beans for about 10 minutes. Season with salt and pepper.
