Ingredients

  • 800 g thick veal sirloin steak (4 thick veal sirloin steaks)
  • Salt
  • black pepper (freshly ground)
  • 200 g mozzarella (9% fat)
  • 150 g pickled red bell peppers (jarred)
  • 1 Garlic clove
  • 2 tbsp clarified butter
  • 200 g fresh spinach leaves
  • 1 tbsp Olive Oil
  • basil (for garnish)

Instructions

    Preheat the oven to 80°C with upper and lower heat.

    Season the meat with salt and pepper.

  3. 3.

    Slice the mozzarella into rounds.

    Pat the peppers dry with a paper towel.

  5. 5.

    Brown the steaks in hot clarified butter for about 3‑4 minutes on each side. Wrap the steaks in foil and let rest in the warm oven for another 10 minutes.

    Wash, trim, and shake off excess water from the spinach. Sauté it in hot oil until wilted, add pressed garlic, steam for a few minutes, season with salt and pepper, then set aside and keep warm in the oven.

    Slice the steaks lengthwise and fill them with spinach, peppers, and mozzarella. Sprinkle additional pepper on top and serve on plates garnished with basil leaves.
