Healthy Florentiner from Spoonsparrow: Sweetening is done exclusively with raw cane sugar, while almonds and dried fruits shine with essential nutrients.

Ingredients

  • 75 g raw cane sugar
  • 0.25 tsp vanilla powder
  • 0.5 tsp cinnamon
  • 100 g whipping cream
  • 2 tbsp butter (30 g)
  • 100 g almond slivers
  • 25 g lemon zest
  • 25 g orange zest
  • 50 g dried fruit (e.g., cherries, plums)
  • 50 g Raisins
  • 200 g dark chocolate couverture

Instructions

    Heat raw cane sugar, vanilla powder, cinnamon and whipping cream in a saucepan while stirring until it boils. Add butter and let it melt. Chop lemon zest, orange zest and dried fruit and stir them into the almonds.

    Let the mixture cool slightly. Using 2 teaspoons, form small mounds on a baking sheet lined with parchment paper. Flatten them gently.

    Bake the Healthy Florentiner in a preheated oven at 200 °C (180 °C fan, gas: level 3) for 5–8 minutes until golden yellow. Cool on a wire rack.

    Melt the chocolate couverture over a double boiler. Brush the underside of the Florentiner with the melted chocolate and let it set.
