Hazelnut Macarons

Ingredients
- 200 g sugar
- 2 tbsp vanilla sugar
- 0.5 tsp cinnamon powder
- 0.5 untreated orange (zest)
- 2 Eggs
- 250 g ground hazelnuts
- flour (as needed)
- 45 hazelnut kernels
- gold leaf

Beat the sugar with vanilla sugar, cinnamon, orange zest and eggs until pale and creamy. Fold in the hazelnuts and cover the batter; chill for about 30 minutes. If the mixture is still too soft, add a little flour.

Preheat the oven to 180 °C (356 °F) fan‑forced or conventional heat.

Using a teaspoon, take small mounds of dough (preferably dipped in water) and place them on a baking sheet lined with parchment paper. Put one hazelnut kernel on each mound and bake for about 15 minutes until lightly golden brown. Remove from the oven, decorate with gold leaf, and let cool.
