Ingredients
- 150 g sugar
- 0.25 l freshly squeezed lime juice
- 100 ml White wine
- 1 Egg white
- 2 baby pineapples
- 1 orange
- 2 Kiwis
- 2 figs
- 1 carambola
- 1 Pomegranate
- 1 light pitahaya
- 1 sprig fresh mint

Cook the sugar with 5 ml water until syrupy, then let cool. Add lime juice and wine, stir well. Whisk the egg white to stiff peaks, fold into mixture. Pour into a shallow metal pan and freeze for 4 hours, stirring occasionally. Halve pineapples, scoop out flesh leaving a rim; remove core and dice. Slice figs, halve pomegranate and separate seeds. Peel orange, segment thickly. Peel kiwis, slice and halve. Slice carambola. Peel pitahaya, cut into strips. Scoop lime sorbet with a spoon, garnish on plates. Add half a pineapple to each plate, top with fruit, sprinkle pomegranate seeds, and garnish with mint leaf.
