Chocolate Truffles

- 450 g whole milk chocolate
- 80 g whipping cream
- 15 g softened butter
- 40 ml amaretto
- 50 whole milk hollow spheres
- 300 g dark chocolate
- gold leaf (for decoration)

Heat the cream. Chop the whole milk chocolate, set aside 200 g, melt the remaining 250 g in the cream while stirring. Add the butter, let the mixture cool to about 30 °C, then add the amaretto and allow it to cool slightly more. Transfer the mixture into a piping bag with a round tip and fill the whole milk hollow spheres. Refrigerate overnight until firm.

Chop the dark chocolate, mix with the reserved whole milk chocolate, melt over a double boiler and temper to about 28 °C. Place some chocolate in your palms and roll the filled spheres between your hands. Set on parchment paper. Then use a praliné fork to coat each truffle with the chocolate and place them on a praliné rack. Let the coating set briefly, then roll the truffles on the rack with the fork until peaks form. Transfer from the rack onto foil and attach a small piece of gold leaf with tweezers.
