Mocha Mascarpone Cookies

Ingredients
- 75 g powdered sugar
- 120 g butter
- 100 g ground hazelnuts
- 120 g ground almonds
- 20 g coffee powder
- 0.5 vanilla pod (aroma)
- 1 egg
- 1 egg yolk
- 150 g white chocolate
- 120 g mascarpone (room temperature)
- 1 tsp ground cloves
- cocoa powder

Mix powdered sugar with butter, hazelnuts, almonds, coffee powder and vanilla aroma in a mixing bowl. Add the egg and yolk and knead into a smooth dough. Wrap in cling film and refrigerate for 30 minutes. Preheat the oven to 180°C (350°F) fan or conventional heat. Roll out the dough on a lightly dusted surface to about 5 mm thickness and cut small star shapes. Place them with some space on a baking tray lined with parchment paper. Knead any remaining dough together, roll out again and use it as well.

Bake in the preheated oven for about 10 minutes. Remove and cool on a wire rack. Melt the chopped chocolate over a hot, non-boiling water bath, sprinkle the ground cloves over it, remove from the water bath and fold in the mascarpone until everything is evenly colored. Let it cool into a creamy mixture. Spoon some of the mascarpone mixture onto half of the cookies with a teaspoon and top with another cookie to form a sandwich. Allow to dry and serve dusted with cocoa powder.
