Ingredients
- 500 g hawthorns (cleaned and weighed)
- 500 g kiwi (peeled and weighed)
- 50 ml dry white wine
- 300 g maple syrup
- 2 tsp grated lemon zest
- 1 packet powdered gelatin (for diabetics)

Wash, clean, and drain the hawthorns. Place them in a pot. Dice the kiwis and add them to the pot with the hawthorns. Roughly mash the fruit with an immersion blender. Mix the wine, maple syrup, and lemon zest into the fruit. Add the gelatin powder and stir. Cook slowly over low heat, stirring occasionally, until the mixture boils gently for 3 minutes.

Fill the hot jam into clean jars and seal immediately with lids. Place the jars on the lids for about 20 minutes, then flip them over and let cool.
