Ingredients

  • 600 g strawberries
  • 1 Vanilla bean
  • 1 tsp organic lemon zest
  • 50 g coconut oil
  • 75 g spelt whole grain flour
  • 50 g chopped almonds
  • 50 g hearty oatmeal flakes
  • 30 g maple syrup (2 Tbsp)
  • 1 pinch salt

Instructions

    Wash, clean and cut the strawberries into pieces. Split the vanilla bean lengthwise, scrape out the seeds and mix with lemon zest and strawberry pieces. Distribute evenly in four oven‑proof ramekins.

    Melt the coconut oil for the dough and combine with flour, almonds, oatmeal flakes, maple syrup and salt to form crumbly streusel. Sprinkle over the berries.

    Bake the crumbles in a preheated oven at 180 °C (convection 160 °C; gas: level 2–3) for 15–20 minutes until golden brown.
