Ingredients
- 8 eggs
- 200 g fresh leaf spinach
- 200 g crème fraîche
- 2 tbsp heavy cream (at least 30% fat)
- pepper (ground)
- Nutmeg (freshly grated)
- Salt
- 2 tbsp breadcrumbs
- 60 g grated cheese (e.g., cheddar)

Cook the eggs for about 8 minutes in boiling water, shock them, peel, halve and place in four small heat‑proof dishes. Drain, rinse, wash, trim, and spin dry the spinach. Whisk the crème fraîche with the cream until smooth and season heavily with pepper, nutmeg and a pinch of salt.

Spread the spinach over the eggs and pour the crème fraiche on top. Mix the cheese with the breadcrumbs and sprinkle over everything. Bake under the preheated grill for about 10 minutes until golden brown. Serve immediately with baguette if desired.
