Ingredients

  • 1 stale roll
  • 1 Shallot
  • 3 tbsp sunflower oil
  • breadcrumbs (as needed)
  • 1 egg
  • 300 g mixed ground meat
  • Salt
  • Pepper (freshly ground)
  • 4 lettuce leaves (e.g., Lollo bianco)
  • 2 Tomatoes
  • 4 rolls
  • 50 pickled mustard cucumbers
  • 2 Tomatoes
  • 1 Red Onion
  • 3 tbsp ketchup
  • Lemon juice
  • Tabasco

Instructions

    Soak the stale roll in lukewarm water. Peel and finely chop the shallot, then sauté it in 1 tbsp oil until fragrant; let cool slightly. Mix the egg and squeezed roll into the ground meat, adding breadcrumbs if needed until the mixture is firm but not too soft. Season well with salt and pepper.

    Shape four patties and fry them in the remaining oil over high heat, turning occasionally for 5–6 minutes until cooked through.

    Split the rolls open. Wash and pat dry the lettuce leaves. Rinse the tomatoes, cut off the stems, and slice them. Place lettuce and tomato slices on each half of a burger bun.

    For the salsa dice the pickled cucumbers. Quarter the tomatoes, remove seeds, and dice them as well. Peel and finely chop the onion. Combine all with ketchup, then season with lemon juice and Tabasco.

    Spread half of the salsa on the bottom bun, place a patty on top, then spread the remaining salsa over the patty. Add the top bun and serve immediately.
