Shellfish in Batter

Ingredients

  • 100 g wheat flour type 1050
  • 1 tsp Baking powder
  • Salt
  • Pepper
  • 125 ml milk (3.5% fat)
  • 1 egg
  • 500 g shellfish fillet (ready to cook)
  • Vegetable oil for frying

Instructions

    Whisk the flour with baking powder, salt, pepper and milk into a smooth batter. Add the egg and stir well until the batter is thick enough to flow from a whisk.

    Wash and pat dry the fish. Cut the fillets into about 0.5 cm thick slices and gently dip each slice into the batter.

  3. 3.

    Heat oil in a pot to about 175 °C and fry the battered fish pieces in batches for 1–2 minutes until golden brown, turning them so they cook evenly.

    Drain on kitchen paper and serve with lemon wedges and remoulade sauce if desired.
