Ingredients
- 500 g ground beef
- 2 Eggs
- 1 tbsp freshly chopped parsley
- 1 tsp sharp mustard
- semolina breadcrumbs (as needed)
- Salt
- Pepper (freshly ground)
- clarified butter (for frying)
- 12 small sesame rolls (party buns)
- 3 tomatoes
- 4 tbsp ketchup
- A handful of watercress
Instructions

Combine the beef with eggs, parsley, and breadcrumbs to form a well-mouldable meat mixture. Season with salt and pepper and shape into 12 small patties.

Heat clarified butter in a pan and fry the patties in batches for 2-3 minutes on each side.

Slice the sesame rolls horizontally and spread ketchup on the lower halves. Wash the tomatoes, cut off the stems, and slice them. Assemble the burgers by placing the patty on the lower bun half, topping with tomato slices and watercress, covering with the upper bun half, and securing with a toothpick before serving.
