Ingredients

  • 1 old-fashioned roll
  • 1 onion
  • 1 tbsp Vegetable oil
  • 1 red chili pepper
  • 2 stalks Parsley
  • 600 g mixed ground meat
  • 1 egg
  • 2 tsp medium-hot mustard
  • Salt
  • Pepper (freshly ground)
  • 30 g clarified butter
  • 8 mini hamburger buns
  • 8 leaves of oak leaf lettuce
  • 4 tomatoes
  • ketchup (for serving)

Instructions

    Preheat the oven to 180°C (350°F) with both top and bottom heating.

    Soak the roll in lukewarm water. Peel and finely chop the onion, then sauté it in a pan with 1 tbsp hot oil until translucent. Remove from heat and let cool. Wash the chili pepper, cut it lengthwise, remove seeds, and finely chop. Rinse the parsley, shake dry, and finely chop the leaves. Mix the ground meat with the egg, mustard, onion, chili, parsley, and the squeezed-out roll; season with salt and pepper. Shape the mixture into 8 small patties and fry them in a hot pan with melted clarified butter until golden brown on all sides. Reduce heat and let the patties finish cooking.

    Cut the hamburger buns horizontally and lightly toast them in the preheated oven. Wash, dry, and tear the lettuce leaves into smaller pieces. Wash the tomatoes, remove stems, and slice thinly. Place lettuce on the bottom half of each bun, add two tomato slices, then top with a patty. Close with the bun lid, stack two mini burgers together, and secure with a long wooden skewer. Arrange on a plate and serve with ketchup if desired.
