Ingredients

  • 150 g butter
  • 150 g sugar
  • 2 Eggs
  • Salt
  • 250 g flour
  • 2 tsp Baking powder
  • 1 tsp lemon zest
  • 150 ml milk
  • 80 g Butter
  • 40 g sugar
  • 100 g cream cheese
  • 150 g powdered sugar
  • green food coloring
  • brown and red sugar lettering
  • brown and blue chocolate lenses
  • 3 chocolate bars
  • 12 small marshmallows

Instructions

  1. 1.

Preheat the oven to 180°C (356°F) with top and bottom heat. Line the wells of a muffin tin with paper liners.

  2. 2.

For the batter, beat the butter with the sugar until creamy, then add the eggs one at a time with a pinch of salt. Mix the flour with baking powder and lemon zest, then alternately fold into the wet mixture with milk to form a smooth batter. Fill the prepared wells and bake in the preheated oven for about 25 minutes; test with a toothpick.

  3. 3.

Remove the freshly baked cupcakes from the oven, let them cool, release them from the wells and allow them to cool completely on a wire rack.

  4. 4.

For the icing, beat the butter with sugar until fluffy, then stir in the cream cheese. Gradually fold in powdered sugar until a spreadable consistency is achieved. Color half of the mixture with green food coloring.

  5. 5.

Spread the cooled cupcakes with the icing. For the mummies, apply the icing as thin strips crosswise over each cupcake.

  6. 6.

Decorate faces with sugar lettering and chocolate lenses; adorn the Frankenstein cupcakes with marshmallows perched on small chocolate bars.

  7. 7.

Let them dry well and serve arranged on a platter.
