Ingredients

  • 250 g flour
  • 75 g sugar
  • 1 pinch salt
  • 1 egg
  • 160 g butter
  • flour (for work surface)
  • 150 g powdered sugar
  • 2 tbsp lemon juice
  • small violet sugar pearls (for decoration)

Instructions

    Mix flour, sugar and salt; sift onto a work surface. Create a well in the center, crack the egg into it, and sprinkle butter flakes around the well. Using a knife, crumble all ingredients together, then quickly knead with hands into a smooth dough. Shape into a ball, wrap in cling film, and refrigerate for 30 minutes.

    Preheat oven to 180 °C (convection). Roll out dough on floured surface to 0.4 mm thickness. Cut star shapes with cutters of various sizes. Place on parchment-lined tray and bake 8–10 minutes.

    Remove from oven, lift parchment off the tray, and let cookies cool on a wire rack. For glaze, whisk powdered sugar with lemon juice until thick; brush stars with glaze. Decorate with violet sugar pearls and allow to dry.
