Halloumi Vegetable Skewers

These Halloumi vegetable skewers are easy to prepare and taste great as dinner or lunch, and they’re perfect for take‑out.

Ingredients

  • 200 g halloumi
  • 1 Zucchini
  • 2 red onions
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 4 bay leaves
  • 1 tsp freshly chopped oregano
  • 1 tsp freshly chopped thyme
  • 4 tbsp olive oil
  • 1 crushed garlic clove
  • Salt
  • freshly ground black pepper

Instructions

    Cut the cheese into 2 cm cubes. Wash the zucchini, remove the stem end and slice it into about 1 cm thick rounds. Peel and quarter the onions. Wash the bell peppers, remove the seeds and cut them into bite‑sized cubes.

    Thread the ingredients onto skewers alternately, adding a bay leaf between pieces if desired.

    Whisk together the herbs with the oil, garlic, salt and pepper, then brush the skewers with this mixture. Let sit briefly.

    Prepare a charcoal grill or preheat an oven grill.

    Place the skewers on the rack (with a baking sheet underneath) and turn them frequently until golden brown in 10–15 minutes.
