Chicken-Potato Skewers
Light, tender chicken skewers with delicate lemon flavors. Potatoes satisfy in a light way and provide many vitamins.
Ingredients
- 400 g very small potatoes (e.g., triplets)
- Salt
- 1 Organic lemon
- 2 sprigs thyme
- 1.5 tbsp liquid honey
- 2 tbsp olive oil
- 600 g Chicken breast fillet
- Pepper
Instructions

Wash the potatoes and cook them in salted water with skins on for 15 minutes covered.

While the potatoes are cooking, rinse the lemon hot and pat dry. Grate 2 tsp of zest, halve the fruit and squeeze out the juice.

Wash the thyme, pat dry and pluck off the leaves.

Whisk together lemon juice and zest with honey, oil and thyme leaves to make a marina

Cut the chicken breast into 3 cm cubes. Place the meat and potatoes in a freezer bag with the marinate and let it marinate for at least 1 hour.

Skewer the meat and potatoes onto wooden sticks and season immediately before grilling with salt and pepper. Grill the skewers on an aluminum tray for about 10 minutes on all sides.
