Halibut with Vegetables Baked in Parchment Paper

Ingredients
- 1 large zucchini
- 2 carrots
- 1 Spring onion
- 0.5 lemon (juice)
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 4 halibut fillets (about 180 g each)
- 4 tsp green pesto
Instructions

Wash, trim and julienne the zucchini, carrot, and spring onion into thin strips about 8 cm long. Place all in a bowl and mix with lemon juice and 2 tbsp oil. Season with salt and pepper.

Preheat the oven to 200 °C fan.

Lay four large parchment paper squares on a baking sheet and brush the center with oil.

Rinse the fish, pat dry, then coat all sides with pesto. Place each fillet on a square of parchment and top with the vegetable mix. Fold the parchment over the fish, seal tightly by folding edges together. Bake on a rack in the oven for 15–20 minutes.
