Halibut with Mushrooms

Ingredients

  • 300 g groats
  • 500 ml vegetable broth
  • 4 halibut fillets (ca. 140 g each)
  • 2 tbsp plant oil
  • 250 g chanterelles
  • Salt
  • Pepper
  • 1 tbsp butter
  • 1 Tbsp freshly chopped thyme
  • colored pepper

Instructions

    Add the groats to boiling vegetable broth and simmer covered for about 40 minutes until all liquid is absorbed.

    Rinse the fish, pat dry, then sear in 1 tbsp hot oil in a nonstick pan, 3-4 minutes per side until golden brown.

    Clean the mushrooms and sauté in remaining oil for 2-3 minutes until golden; season with salt and pepper.

    Stir butter and thyme into the groats, season with salt and pepper. Plate the fish with colored pepper and top with chanterelles on the groats.
