Ingredients

  • 4 pieces halibut fillet (about 160 g)
  • 800 g potatoes (cooked)
  • olive oil
  • 2 tbsp freshly chopped herbs (thyme and rosemary)
  • Salt
  • Pepper (freshly ground)
  • 400 g egg tomatoes
  • 0.5 tsp white peppercorns
  • 0.5 tsp mustard seeds
  • 0.5 tsp Curry Powder

Instructions

    Preheat the oven to 200°C fan-forced. Line a baking tray with parchment paper.

    Wash and pat dry the fish. Peel the potatoes and slice them. Toss the slices with 3 tbsp oil, herbs, salt, pepper and spread on the tray. Roast in the oven for about 10 minutes until lightly golden.

    Meanwhile, wash and halve the tomatoes. Crush the peppercorns and mustard seeds in a mortar, mix with curry powder and 3-4 tbsp oil. Season with salt and brush onto the fish fillets. Turn the potatoes in the oven and place the fish with tomatoes on top of them. Drizzle the tomatoes with 2 tbsp oil, season with salt and pepper and bake everything together for 10-15 minutes until done. Gently flip once during cooking.
