Ingredients
- 8 sea bass fillets (about 100 g each)
- 1 bulb fennel
- 250 g Spinach
- 3 oranges
- olive oil
- Salt
- freshly ground pepper

Wash the sea bass and pat dry. Wash, trim and slice the fennel lengthwise into thin strips. Wash and trim the spinach. Juice one orange; cut the other two into fillets. Sauté the fennel in 2 tbsp olive oil for 2-3 minutes, then deglaze with the orange juice. Let cook a few minutes, then add the spinach and orange fillets, seasoning with salt and pepper.

Season the fish fillets with salt and pepper, drizzle with oil, and grill over high heat on both sides for 5–6 minutes.
